Description:  Ajowan is an annual herb, (1-2 ft) in height, bearing feathery leaves and red flowers. When the egg-shaped grayish seeds are ripe, they are dried and crushed. Native to India as an Ayurveda herb, it is also cultivated in Iran, Egypt, Pakistan and Afghanistan. The seeds are used as a spice found in Indian cooking where it is known as bishop’s weed or carom.  It is occasionally an ingredient of curry powder.  Has been used as a substitute for cumin. 

It was used extensively by the pharmaceutical industry for the isolation of thymol, an excellent, yet powerful antiseptic and germicide.  Still used in toothpastes, household products and perfumery.  Since the introduction of synthetic thymol, its use for thymol content has dropped. 

The essential oil is steam distilled from the seeds and produces a yellowish-orange to red liquid.  The scent has a herbaceous-spicy medicial odor, much like thyme.

The essential oil contains mainly thymol (40-55%), pinene, cymene, dipentine, terpinene, and carvacrol among others.
